Barbecue chicken Fajita Skewers
Barbecue season is upon us and if you want to find a low fat alternative to the usual sausages and burgers then these chicken fajita skewers could help.
Serves 3 people (6-8 skewers)
Fajita skewers
- 4 chicken breasts- the best quality you can afford.
- 3 Peppers- Mix the colours red, green and yellow
- 1 red onion
- 2 garlic cloves
- 1 tsp cumin
- 1 tsp dried oregano
- 1 tsp smoked paprika
- 1 tsp Olive oil
Guacamole
- 2 ripe avocados
- 1 lime
- 6 cherry tomatoes, halved
To serve
- Warmed tortillas
- Lime wedges
- Chopped coriander,
- Sour cream or low fat natural yoghurt
- Chilli sauce to taste
Instructions
To make the marinade add the olive oil, oregano, cumin, garlic and cumin to a big bowl, dice the chicken and coat.
Chop the peppers and onions into chunks. Put the chicken and the vegetables onto the skewer, mix them together for a nice effect. Put skewers in the fridge for a few hours if you have time.
Scoop out the avocado into a bowl add the juice of a lime and the cherry tomatoes and mash together.
Cook the skewers on the BBQ griddle or griddle pan on your hob for 10-12 minutes, keep turning them until they are cooked through.
Serve with warmed tortillas, guacamole, sour cream or yoghurt, chopped coriander, lime wedges and chilli sauce to taste.
