Nutritional highlights of this morning booster- There are so many nutritional benefits to this porridge dish that it would take all day to list them so I will  focus on just a few for now.    Lets start by talking about the blueberries…  Blueberries are the king of antioxidants, they have the highest antioxidant capacity of any commonly consumed fruit. In short this means that they help to protect against DNA damage which may help to protect you against ageing and cancer. The benefits of eating blueberries are almost too numerous to list here. but one of the more surprising ones is that they help to maintain brain function and improve memory.  According to animal studies, the antioxidants in blueberries tend to accumulate in areas of the brain that are essential for intelligence. They appear to directly interact with aging neurons, leading to improvements in cell signalling, so if you have a challenging day at work or an exam ahead this is a great way to kickstart your day.  It is also proven that if you eat a handful of nuts everyday there are wide variety of benefits, the heart friendly plant sterols in pecans are great for lowering cholesterol, they also help to prevent the formation of plaque that hardens the arteries. And last but by no means least, the chia seed!- this is one of the most nutritionally dense superfoods on n the planet!  Aztec warriors used to eat them before going in to battle to give them extra strength.  If you made this dish a regular part of your breakfast routine you would be supercharged!!

Serves 2 people 

Ingredients

  • 300ml almond milk
  • 200g blueberries
  • 1/2 tbsp maple syrup
  • 100g jumbo oats
  • 2tbsp chia seeds
  • 50g pomegranate seeds
  • 1 handful of pecans either whole or sliced.
How to make it….
  1. In a blender blitz together the milk, blueberries , maple syrup until it all turns purple.
  2. Put the chia and the oats into a mixing bowl.
  3. Add the blitzed mixture to the oats and leave to soak for 5 mins stirring occasionally until the mixture has thicken and the liquid has been absorbed.
  4. Pour the mix into 2 bowls and arrange the fruit and nuts on top.
  5. You may wish to vary the nuts and fruits that you use to top your porridge
